4 pieces of chicken breast (skinless and boneless)
2 green onions
2 cloves of garlic
1 small can of diced green chilies
1 large or medium can of green Chile enchilada sauce
shredded cheese (original recipe calls formozzarellaa but I use jack
orColbyy jack...its cheaper)
1 package of flourtortillass (any size, its all personal preference.)
Okay, so....boil the chicken, let it cool and then shred it, with you
hands. I usually cut it into big chunks and then tear it apart with
chop the onions and garlic
Your gonna mix all the ingredients together, only use 2/3 the can of
green enchilada sauce, you will need a little later. I think I use
about 1 to 1 1/2 cups of sour cream. Probably 2 cups of cheese.
Again, its all to taste.
After everything is all mixed you can add more of something if it
doesn't taste like you want it to.
Then get a big dish....put 1 scoop of the mix at the bottom to keep
the casserole from burning at the bottom.
Place one layer of tortilla on the bottom, then 2 big scoops of the
enchilada insides and continue to layer until you dish is full or your
